Chorizo Chicken and White Bean Chili
What You’ll Need:
2 minutes prep | 30-60 minutes cook
Makes 6-8 Servings
1lb chorizo browned
1/2lb shredded chicken
1 can cream of chicken
2 cans white chili beans
2 heaping tsp Better Than Bullion Roasted Chicken Base*
1 can mushroom slices
Sprinkle garlic, cumin, oregano and chili powder
* Mix the BTB chicken base with warm water by placing it in the cream of chicken can (less dishes!)
Directions:
You can make this on the stovetop (faster) or slow cooker. I keep the meats prepared and frozen ahead of time for quicker cooking.
Using fully cooked meats, combine all ingredients in a pan (at least 3Qt size). Mix well.
Bring to a boil and then reduce to a simmer if on the stovetop. Set to high for 1 hour and then warm if using a slow cooker.
