What You’ll Need:

10 minutes prep | 30 minutes cook

Makes 4-6 Servings

1 package smoked sausage (pork or chicken - fully cooked) - diced

1 head cabbage - chopped

1 onion - chopped or sliced thin

3 bell peppers - sliced thin

8 oz muchrooms

1 zuchinni and/or yellow squash (if in season) - chopped

1 bag of frozen broccoli and/or cauliflower (optional)

Extra Virgin Olive Oil

2-3 cloves of minced garlic (sub 1-2 tsp garlic powder)

Salt and Pepper to taste

Aluminum Foil

Baking Sheet

Directions:

  1. Preheat oven to 425F

  2. In a large mixing bowl or gallon zip-lock bag, combine all ingredients. Use enough oil to lightly coat mixture.

  3. Place foil on baking sheet. Make sure it overhangs the baking sheet on all sides by about 2 inches.

  4. Spread contents of mixture evenly across the foil.

  5. Cover the contents with another over-sized piece of foil. Roll the bottom piece and top piece of foil together along the edges to create a large foil packet. Make sure the packet is well sealed and there is a dome appearance to allow for air movement within.

  6. Bake in preheated oven for 25-30 minutes.

  7. Upon removal, be very careful as steam will escape when the foil is opened.

  8. Salt and pepper to taste

* It may look like too many veggies when you start. They cook down considerably, so don’t be concerned of the initial volume.
