Chicken Feta and Spinach
What You’ll Need:

Makes 8 Servings
2 lbs boneless skinless chicken breast
8 oz cream cheese softened
12 oz frozen chopped spinach
1 cup mozzarella cheese grated
1/2 cup feta cheese crumbled
1/4 cup milk
1 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
1/8 tsp all spice
1/16 tsp cayenne pepper
Directions:
Preheat oven to 375F.
Cut chicken breasts in half to make them thinner. Then, lie them flat in a large baking or casserole dish.
Thaw the spinach (40% for 3 minutes in the microwave did the trick). Then use a paper towel to roll the spinach and press out as much water as possible.
While ringing out the spinach, you can soften the cream cheese by adding the 1/4 c milk to it in a large bowl and microwaving for 30-60 seconds.
Once the cream cheese is soft, add the spinach, feta, mozzarella and spices to the large bowl. Mix to combine well.
Spread the cheese and spinach mixture evenly across the chicken breasts.
Place in the oven uncovered and bake for 35 minutes.
Remove from the oven, stir and carefully cut the chicken into pieces (or shred it depending on the chicken texture).
Stir well and place back in the oven for 5-10 minutes.
Serve warm.
This makes fantastic wrap filling (use high fiber wraps to keep the net carb count low).
You can garnish with tomatoes or eat alongside a salad.
