Easy Breakfast Casserole
What You’ll Need:

Makes 8 Servings
1 can crescent roll dough
1lb sausage (pork or turkey)
4 eggs
1/4c shredded sharp cheddar cheese

6 oz frozen spinach
2 tomatoes diced
Directions:
Preheat oven to 375F.
Brown sausage over medium-high heat and chop to crumble as it browns.
Grease an 8x8 casserole dish. Spread 4 (half a can) crescent rolls on the bottom of the pan and press together and up the sides a bit.
Once the oven is hot, place the pan with half the crescent rolls in until the are beginning to rise and then remove from the oven. They won’t be browned.
While those are in the oven, finish browning the sausage. Drain the excess grease (or soak up with a paper towel).
If you’re adding spinach and tomatoes (or any other veggies for that matter), add them now and stir in well. Let that simmer covered for 3-5 minutes. Stir often to prevent the veggies from burning.
Over low heat, add the 4 eggs to the sausage. Stir while the eggs cook to prevent sticking. If there’s extra moisture from the veggies, keep stirring until it is evaporated.
Once the crescent rolls are beginning to rise and you’ve removed the pan from the oven, carefully places the sausage and egg mixture on top of the crescent roll base.
Spread the mixture evenly and cover with 1/4 c shredded cheese.
Use the remaining half of the crescent rolls to cover the top. This won’t be a solid covering. Ideally you can use 2 on opposite sides and then fill the gap between with strips of the remaining two.
Bake uncovered for about 10 minutes (until the top is browned on the edges).
Serve warm.

This is best used as a “savor occasionally” recipe, but is easy and reheats well. So, you may find this is handy for special occasions or when you have company.
To enjoy often, switch to Turkey sausage, add veggies and only place the top layer of crescent roll (half a can)!
