What You’ll Need:

5 minutes prep | 25 minutes cook

Makes 12 Servings

1lb ground beef(or turkey)

1pk frozen peppers and onion

1pk frozen riced cauliflower

3 cloves minced garlic

1 can tomato sauce

2 Tbsp Worcestershire Sauce

1 Tbsp Apple Cider Vinegar

2 Tbsp Maple Syrup

1/4 cup brown sugar (optional)

1 tsp ground mustard

1/2 - 1 tsp ginger

1/2 - 1 tsp all spice

salt and pepper to taste

Directions:

  1. Begin browning your meat over medium heat.

  2. While the meat is browning, chop the frozen peppers and onion until they are about the size of the riced cauliflower. A mini chopper is handy for this.

  3. Add the chopped peppers, onion and garlic to the meat. Stir often and chop meat as it browns.

  4. Add frozen cauliflower to the mixture and continue stirring frequently.

  5. Add remaining ingredients and bring to a boil.

  6. Once it boils, make sure everything is well combined and then let it simmer uncovered for 5-10 minutes (to let the flavors combine).

  7. If there is still too much liquid, bring it back to a boil and stir frequently until it thickens (by evaporating the excess fluid).

Serve hot. This can be eaten alone or served on a bun! Garnish with mustard and/or ketchup.
