Quick Healthy Chicken Tacos
What You’ll Need:

Makes 2-4 Servings
1 lb boneless, skinless chicken breast
Marinade:
1/4 cup Olive Oil
1/4 cup Apple Cider Vinegar
1/4 cup Lemon Juice
1/8 cup Soy Sauce (low sodium)*
2 tsp Minced Garlic
1 tsp Pepper
Low Carb Tortilla (optional)
Toppings: shredded cheese, salsa, sour cream, lettuce
Directions:
Slice chicken breast length wise into strips about 1 inch wide.
Place all marinade ingredients and chicken strips in a gallon storage bag. Allow to soak for at least 30 minutes in the fridge. (Tip: press all air out of the bag and then seal to allow marinade to contact all of the chicken.)
Heat grill on high heat.
Grill strips on first side for about 3 minutes or until they easily flip without sticking.
Flip and grill another 3-4 minutes or until you can fold a strip in half and it breaks easily.*
Remove from the grill and cover with a lid or foil (this holds in the moisture). Gather tortillas and toppings while allowing the meat to rest.
You can now create your own chicken taco or chicken taco salad. Enjoy!

* Raw chicken can contain salmonella and other bacteria that can make you sick. Handle with care, keep hands and utensils clean. Cook to an internal temperature of 165F.
